Welcome back to another How To Tuesday. This Tuesday we are going to tackle a hot issue that has been blowing up my Instagram and that is: how to cook the perfect egg. Surprisingly, this is an extremely simple task that requires a secret ingredient – water.
Why does cooking the perfect egg even matter? When you’re trying to eat healthy, you definitely have to cook more. When you don’t know how to cook, you won’t eat healthy. So here is my guide for my world famous over easy eggs. These eggs will look and taste amazing, every single time.
STEP ONE: HEAT FAT
You’re going to need some fat in your pan, I don’t care how non-stick it is. Usually what I do here is cook up some bacon and then leave the rendered fat in the pan. Other options include, but are not limited to: duck fat, lard, ghee, butter, avocado oil, coconut oil.
I have noticed that animal fats work best at not charring and making the bottom of the egg overly crispy.
Either use the left over fat from something else or add the fat to a reasonably hot pan. You want the heat at about a medium-high range.
STEP TWO: GET EGGS IN PAN
Crack the eggs on a flat surface and open into pan. Some people think it is better to crack them on the edge of a counter top or even the side of the pan, which I will disagree with. Cracking on an edge will leave you with shards of shell in your eggs and broken yolks. Two no-no’s in the cooking egg world. You will not be able to cook the perfect egg this way, trust me.
Crack on a flat surface. Toss in pan.
STEP THREE: ADD WATER AND COVER
Add about two tablespoons of water and immediately cover the egg with the lid of the pan. For every additional egg you have, add another 1-2 tablespoons of water. The pan should be hot enough where the water immediately starts to sizzle and turn into steam. If not, you’re pan is not hot enough and you’re not going to be able to cook the perfect egg.
STEP FOUR: REMOVE, SEASON, BREAK YOLK AND EAT
If you’re smart, you’ll have a glass lid so you can cook the yolks to your liking. Some people like them a little firm, some like them not at all. This is a preference thing here. You’re going to be effectively steaming the egg so you don’t have to flip it. This will be about 2-4 minutes depending on how you like the egg yolk.
Remove from the pan and season appropriately. If you’re going to be taking a photo for Instagram, pop the yolk, of course. Then feast knowing that you now can cook the perfect egg!
- 1 egg
- 2 tablespoons water
- 1 tablespoon fat
- Heat fat to medium-high heat in a non-stick pan
- Crack egg on flat surface and drop into pan
- Add 2 tablespoons water and cover lid
- Cook 2-4 minutes or until desired yolk density
